Beverage Supervisor

The Beverage Manager oversees all areas pertaining to the outlets such as providing a quality product, handling cost control and offering the best possible service of all beverage items to our guests. The Beverage Manager is responsible for the leadership, supervision and activities of our bars. The successful candidate is highly energetic, strategic, and front facing. The position requires consistent attention to detail, creativity, strong communication and computer skills, and an entrepreneurial spirit. Previous beverage/bar leadership background in a luxury hotel setting is preferred. The Beverage Manager reports to the Director of Food and Beverage. Demonstrates Cliff House guiding principles and core values, which serve as a guide to respective associates.

Essential Functions

  • Oversee all beverage programs to include: restaurant, lounge, in-room dining, banquets and coffee shop.
  • Maintain complete knowledge of and comply with all departmental beverage policies/service procedures/standards.
  • Maintain complete knowledge of:
    • All liquor brands, beers, and non-alcoholic selections available.
    • Particular characteristics and description of every wine/champagne by the glass and major wines on the wine list.
    • Designated glassware and garnishes for drinks.
    • All menu items - Preparation method/time, ingredients, sauces, portion size, garnishes, presentation and prices.
  • Ensures all team members have completed the mandatory liquor course before serving
  • Lead and direct all beverage dept. managers to ensure hotel standards are maintained.
  • Responsible for taking the lead in growing wine/beverage sales in the restaurant.
  • Maintains awareness to customer focus and attention to detail.
  • Work the floor during service with an emphasis on beverage sales. Up-sell at all possible opportunities.
  • Train staff on quality level of service regarding body language, eye contact and proper verbiage and seek to positively enhance the guest experience throughout service. Maintain a thorough knowledge of all wine, spirits, coffees, teas, etc.
  • Responsible for ordering all bar products-liquor, beer, wine and consumables to par, as required.
  • Perform weekly and monthly inventory of all beverage department products, as required.
  • Research and conduct comprehensive beverage trainings for FOH staff.
  • Oversee maintenance/cleanliness of all decanters, wine stations and all storage areas pertaining to beverage.
  • Constantly monitor associate performance in all phases of service and job functions; coach to rectify any deficiencies.
  • Provide continuous feedback to the F&B managers and associates regarding beverage performance. Foster and promote a cooperative working climate, maximizing productivity and associate morale.
  • Monitor guest reactions and confer frequently with service associates to ensure guest satisfaction.
  • Maintain complete knowledge of correct maintenance and use of beverage equipment.
  • Monitor and maintain cleanliness, sanitation and organization of assigned bar areas.
  • Establish par levels for supplies and equipment. Ensure department managers are maintaining beverage par levels and requisitioning as needed.
  • Assist in the review of beverage sales from previous day; resolve discrepancies with accounting. Track revenue against budget.
  • Assist in setting the system and processes part of the liquor, beer and wine ordering.

Qualifications

Minimum 3 years as a Beverage Manager in a upscale hotel environment or 3-5+ years as a Lead Mixologist Bartender at a restaurant combination of both experience with proven experience with all aspects of beverage operations, and sales including, forecasting, ordering, inventory, costing and marketing.
* BA/BS in Hospitality/Restaurant Management, Business or equivalent field a plus.
* Proven systems knowledge and experience with InfoGenesis/Micros POS and software knowledge of Bevager - Craftable or combination of these systems required.
